Week 7: Cheesy, Gooey, Melty Eggplant Parmesan

Move over, chicken parmigiana!!


Eggplant Parmesan is one of my all-time favourite comfort foods, and my mom's recipe is so delicious. Just how it is made in the southern regions of Italy, this dish is melty, cheesy, and full of flavour!


In a 9-inch round or square oven proof pan, spread a thin layer of tomato sauce covering the bottom and drizzle olive oil. Lay the eggplant, slightly laying pieces over one another. Add another light layer of sauce, and sprinkle the desired amount of mozzarella and parmesan on top. Repeat this to make it will be delicious!

This is the perfect addition to any lunch or dinner party. Everyone always loves it so much and wants to learn the recipe to make it themselves. Try it out, and let me know if you love it as much as we do!


Ingredienti

  • 1 full eggplant, sliced thinly

  • 1 jar of tomato sauce

  • olive oil

  • salt

  • mozzarella cheese

  • parmesan cheese

  • basil


Ricetta


Heat oven to 350 degrees F.


Cut the eggplant into thinly sliced pieces. Place the slices on the grill and lightly drizzle olive oil on top. Grill the eggplant slices until grill lines form, flipping them over once. Remove from the grill onto a plate lined with a paper towel. Sprinkle kosher salt or sea salt over the grilled slices.


In a (insert pan type), spread a thin layer of tomato sauce covering the bottom and drizzle olive oil. Lay the eggplant, slightly laying pieces over one another. Add another light layer of sauce, and sprinkle the desired amount of mozzarella and parmesan on top. Repeat this three more times.


Bake for about 20-25 min until the cheese is brown and the sauce is bubbling.
