Week 2: Breadcrumbs on pizza is not weird!

If you follow me on Instagram (if not, you're missing out), you have definitely seen my pizza reel. This week, I share my family's recipe for the famous Sicilian-style pizza -"Sfincione"!


Originating from the Palermo area, Sfincione is a must-try delicacy found all across the island. This pizza features thick dough with a spongy texture, topped with onions, tomatoes, chunks of Parmesan cheese, oregano, and breadcrumbs - how good does that sound!! My Nonno was born and raised in the Sicilian capital of Palermo, so this is one recipe I hold close to my heart, and I am so excited to share it with all of you!

Fun Fact: This pizza is so loved that the town where it originated (Bagheria, Sicily) holds an annual two-day Sfincione festival. Petition to start a yearly pizza day in Canada can be found below. Just kidding!

Ingredienti

  • pizza dough (fresh or frozen)

  • breadcrumbs

  • 1/2 small onion, thinly sliced

  • parmesan cheese cut into small cubes

  • oregano

  • whole canned tomatoes (peeled)

  • salt

  • olive oil

  • flour


Ricetta

Set oven temperature to bake at 400 degrees F, with the oven rack in the middle of the oven.


Lightly flour the pizza dough and place it in a lightly greased (olive oil) 9x12 pan with high sides. Stretch out dough to cover the bottom of the pan.

Push the cubes of parmesan cheese into the dough, approximately 12 cubes. Break up the whole tomatoes, omitting the juice, and place on pizza dough evenly.


Place thinly sliced onions evenly over the tomatoes.


In a separate bowl or plate, mix breadcrumbs with salt and oregano. Mix well. Sprinkle the breadcrumb mixture over top of the pizza evenly. Finish with a light drizzle of olive oil. Place in the oven for approximately 20-30 minutes until the bottom of the pizza is golden brown. If the top is not browned to your liking, you can broil for 1-2 minutes at the end.


Cut into slices and serve! Buon Appetito!
