Week 4: Torta di Mele. From the Kitchen of Mamma

What has been missing from the blog so far? DESSERT!


Welcome back to another week of Ciao Tutti. This week I learned to make a classic northern Italian dessert: Torta di Mele (Apple Cake). It's a quick and easy recipe, resulting in a light, moist, and absolutely delicious cake (not only because you use "red delicious" apples).


Apple orchards wind their way through the region because of its cool weather, with thousands of hectares of land dedicated to apple production. Because of their fruitfulness, apples are used in various dishes, but this one is definitely my favourite! Unlike many other apple cake recipes where apples are an afterthought, thrown in for some added flavour, the apple highlights this cake. They make up most of the filling, bound by a slightly sweet and tangy batter.


I promise it will become your go-to dessert to bring to dinner parties.


Ingredienti:

  • 1 cup of flour

  • 2 eggs

  • 2/3 cup of sugar

  • 1 stick of melted butter (1/2 cup)

  • 1 lemon rind, grated into zest

  • pinch of salt

  • 1 tbsp white rum

  • 1/2 pkg. Lievito Bertolini

  • 5 apples ("red delicious") peeled and thinly sliced



Ricetta:


Preheat oven to 350 degrees F on bake.


In a large bowl and using a hand mixer, beat 2 eggs. Slowly add in the sugar and beat until well combined. Next, using a spatula, mix in the melted butter, salt, lemon zest, and white rum. See the video below for the desired batter consistency.


In a separate bowl, combine flour and the Lievito Bertolini. This is a form of yeast that has a mild but delicious vanilla scent and flavour. You can find it at most Italian grocery stores.


Wash, peel, and slice the apples. Add the thinly sliced apple pieces into the wet batter mixture and stir well, making sure to coat the apples.




Add the dry flour mixture into the wet apple mixture, a spoonful at a time. Continue until there is no more flour mixture leftover. Mix well.





Grease a 9 inch round spring foil pan with butter and lightly coat with flour. Add in the apple mixture.


Bake until browned, about an hour, or insert a toothpick into the cake and remove it cleanly.


Remove from the oven and let stand until cooled. Slice and serve.
